Safe Home Canning Recipe, Altitude, Process and Jar Workbook

Purpose: Lock a tested shelf-stable canning process before the food enters jars, then record what actually happened. This workbook is not a recipe and cannot validate a family or internet recipe.

STOP: If you cannot identify a current USDA/NCHFP or land-grant Extension tested shelf-stable process for the exact product, do not invent one. Refrigerate, freeze, dehydrate with a validated method, or choose a tested canning recipe.
