The per-capita consumption of lard in the United States reached approximately 10.9 pounds per household per year during the late 1930s. That figure, from USDA Bureau of Agricultural Economics data compiled in the 1950s, represents a food system in which animal fat was not a byproduct or an afterthought but a primary cooking medium that households tracked, stored, and used deliberately.
The USDA Bureau of Home Economics, which operated between 1923 and 1962 under the direction of Louise Stanley, produced guidance on the use of cooking fats as part of its broader effort to document and improve household food practice. Stanley and her colleagues were scientists working during an era when the nutritional properties of fats were understood differently than they are today, but their practical guidance on how to obtain, render, store, and use cooking fats from an animal source was based on observation and experience that holds up.
Lard's role in the Depression-era kitchen was not primarily about poverty. Households that kept hogs or had access to pork trim rendered their own fat because it was the available cooking fat, it was cheap or free, it stored well without refrigeration, and it worked. That calculation has not fundamentally changed. Rendered lard remains one of the most economical and shelf-stable cooking fats a household can produce from whole ingredients.
What Lard Was, and Where It Came From
Lard is rendered pork fat. The word describes both the raw material and the finished product — the clarified fat that results from slowly cooking raw pork fat until the liquid separates from the solid proteins and connective tissue. The quality of the finished lard depends on which part of the animal the fat comes from and how carefully it is rendered.
Leaf lard, from the fat surrounding the kidneys, was then and is now considered the highest grade. It has the mildest flavor, the cleanest white color when rendered, and the most neutral cooking properties. Bureau of Home Economics guidance distinguished leaf lard from fatback, trim fat, and other sources, recommending leaf lard specifically for pastry and baked goods where a neutral fat was important. For general frying and savory cooking, other sources of pork fat served equally well.
In the 1930s, households with access to a whole or partial hog — either through their own keeping or through a neighborhood butcher — obtained raw fat as a matter of course. Urban households without this access purchased commercial lard, which was widely available and inspected under federal meat inspection regulations. The choice between home-rendered and commercial lard was largely one of access and preference, not quality. Both were real food.
Crisco had been available since 1911, and by the 1930s vegetable shortening was an established alternative. But the shift from animal fat to vegetable shortening as the dominant American cooking fat happened gradually across the mid-twentieth century. During the Depression years, lard remained the primary cooking fat in most American households, particularly in rural areas and in households that processed their own pork.
How Households Rendered It
The Bureau of Home Economics documented two methods of home rendering: the dry method and the wet method. The dry method — cooking the fat in a heavy pot over low heat without added liquid — produced a cleaner, more shelf-stable product with a more neutral flavor. The wet method, which used water to prevent scorching during the early stages of rendering, produced a comparable result but required the water to cook off completely before the fat was shelf-stable.
The essential technique in both methods was low heat and patience. High heat or inattention produced a scorched batch with a pronounced off-flavor that could not be corrected. The fat needed to be cut into small, uniform pieces — smaller pieces meant more surface area and more complete rendering. Partial freezing made the cutting easier and helped maintain temperature during the early stage of rendering.
The endpoint was visible: the solid pieces, called cracklings, would shrink as the fat cooked out, turn golden, and eventually stop bubbling actively. At that point the liquid fat was poured through a fine strainer or cheesecloth into clean containers, and the cracklings were recovered separately. Nothing was discarded. Cracklings were pressed to extract the last of the fat, and the drained cracklings themselves were used in cooking.
The Dry-Render Method
- 1.Start with raw pork fat — leaf lard for pastry, fatback or trim for cooking. Cut into 1-inch cubes. Chill or partially freeze for easier cutting.
- 2.Place in a heavy pot (cast iron or enameled steel) with 1/4 cup water per 2 pounds of fat. The water prevents scorching during the early stage and cooks off as rendering proceeds.
- 3.Cook over low heat, stirring occasionally. The fat will liquefy gradually over 1 to 3 hours. Do not rush this with higher heat.
- 4.Watch the cracklings. When they turn golden and the active bubbling slows significantly, the rendering is complete. Remove from heat immediately.
- 5.Strain through cheesecloth or a fine strainer into clean, dry jars. Cool to room temperature before sealing. The fat will turn white and opaque as it cools.
- 6.Reserve the cracklings. Press them to recover the last of the fat, then use in cornbread, over greens, or as a savory snack.
Storage Before Refrigeration
One of lard's practical advantages over dairy butter was its stability at room temperature. Properly rendered lard, with all moisture removed and stored in a clean sealed container away from light, could be kept for months at room temperature in a cool location. In the era before widespread electric refrigeration — which was not universal in American homes until after World War II — this was not a minor consideration.
The Bureau of Home Economics and extension service guidance on lard storage was consistent on a few points: complete moisture removal was essential, because any water left in the fat encouraged bacterial growth and rancidity; containers needed to be clean and airtight; and storage in a cool, dark location extended shelf life significantly. A root cellar, a cool pantry, or a basement shelf that maintained temperatures below 65 degrees Fahrenheit through summer months was adequate for several months of storage.
Rancidity was the primary spoilage mode. Properly rendered and stored lard that has gone rancid is detectable by smell — the sharp, stale odor of oxidized fat is unmistakable. Rancid lard was discarded, not used in cooking. The household practice of keeping a smaller jar of working lard near the stove while storing the bulk in a cooler location managed this: the working supply was used quickly while the stored supply remained stable.
What the Depression Kitchen Did With It
Lard's range of cooking applications made it the most versatile fat in the Depression-era kitchen. The Bureau of Home Economics documented its use in frying, baking, sauteing, and as a fat for bean cooking and greens. Each application used different grades and properties of the fat.
For frying, lard's high smoke point and stability at frying temperatures made it superior to butter and comparable to refined vegetable oils that did not yet exist in widespread form. The Southern tradition of frying chicken in lard reflects a real technical advantage: the fat produces a dry, crisp crust without the bitterness that occurs when butter's milk proteins burn at frying temperatures.
For baking, leaf lard's neutral flavor and its structure at room temperature made it the preferred fat for pie crust. Fat creates flakiness in pastry by coating flour particles and preventing gluten development. Lard's fat crystal structure at room temperature produces a particularly short, tender crumb. Bakers who have worked with both lard and butter describe lard-based pastry as reliably flakier, if less rich in flavor.
Bacon grease, the rendered fat from cooking bacon or salt pork, was kept separately from rendered lard and used daily. Every household with a source of pork kept a jar of bacon drippings near the stove. It went into cornbread, over cooked greens, into bean pots, and as a starting fat for most savory cooking. Nothing that came out of the skillet was discarded.
What a Modern Household Takes From This
The practical case for understanding lard is not that modern households should return to Depression-era diets. It is that understanding how a single animal byproduct — pork fat — was used across an entire cooking repertoire illustrates a principle of pantry management that has largely been abandoned: that cooking fats are a resource to be managed, not a commodity to be repurchased each week in whatever form is most convenient.
A household that keeps a jar of bacon drippings on the stove and occasionally renders trim fat from a pork shoulder is not performing nostalgia. It is maintaining a functional fat supply that extends the utility of every piece of pork it cooks, reduces waste, and produces a shelf-stable cooking fat at no additional cost. The rendering process itself takes passive time more than active time — the pot needs occasional attention, not continuous tending.
For households with pantry-building goals, rendered lard stored in sealed jars in a cool location is a legitimate addition to the cooking fat supply. It requires no electricity to store for months. It is one of the few cooking fats that can be produced entirely from an ingredient a household might already have — trim fat from a pork shoulder or ribs is rarely priced as a premium product. What the Bureau of Home Economics documented in the 1930s has not become less practical in the intervening ninety years.
