Planning What to Do With Surplus Produce
Route surplus before quality declines.
A basket of extra tomatoes, beans, cucumbers, greens, squash, peppers, herbs, or fruit is not yet a preservation project. It is a decision problem. Some food should be eaten tonight. Some can wait. Some is better shared while fresh. Some is worth freezing or drying. Some can be safely canned or fermented only through a research-tested process. Some should never enter a human-food channel. This guide helps you decide before the harvest loses the quality that made it worth growing.
The five-minute answer
- Screen the food first. Separate rotten, moldy, contaminated, or otherwise unsafe produce before planning storage or preservation. Preservation is not a rescue method for unsafe food.
- Sort by urgency. Highly perishable crops and fully ripe produce usually need a decision sooner than sound storage crops. Crop-specific storage conditions matter.
- Reserve what you will actually eat fresh. Write the meals, snacks, or household uses that can absorb the produce during the next several days.
- Use simple storage when it is enough. Some crops can be held safely and with good quality under the right temperature and humidity. Do not process food simply because it exists.
- Share or donate high-quality food while it is still useful. Use the garden's #55 distribution system for recipient fit, custody, records, and institutional requirements.
- Preserve only through a method that fits both the food and your capacity. Freezing, drying, canning, and fermentation have different equipment, time, storage, power, recipe, and safety requirements.
- Choose the tested procedure before starting the batch. Especially for shelf-stable canning and pickling/fermentation, do not invent a process after the produce is already cut.
- Label, date, inventory, and use the result. A pantry or freezer full of forgotten food is delayed waste, not successful preservation.
- Feed the lesson back into the garden plan. Repeated surplus may mean you should plant less, stagger planting, harvest differently, recruit a recipient earlier, or deliberately grow for preservation next year.

First screen: is this food still suitable for a human-food plan?
FDA advises choosing produce that is not bruised or damaged, cutting away damaged or bruised areas before preparation, and throwing away produce that looks rotten. Washing can reduce surface bacteria but does not eliminate them. That means washing, cooking, freezing, drying, canning, or fermenting should not be used as a blanket excuse to keep food with an unresolved contamination problem.

Put the harvest on a quality clock
Different crops have very different storage requirements. University of Minnesota Extension notes that temperature and humidity are the main storage factors and that expected storage life is only an estimate. A household refrigerator is not automatically the right long-term environment for every crop. USDA's FoodKeeper likewise treats storage times as guidelines rather than hard rules.
Use first
Highly perishable or fully ripe
Leafy greens, tender herbs, berries, sweet corn, very ripe fruit, and similar crops often lose quality quickly. Confirm crop-specific handling, then route these first.
Plan next
Moderate holding window
Many beans, cucumbers, summer squash, peppers, and ripe tomatoes need a near-term plan but may give you enough time to cook, share, or schedule a preservation batch.
Verify storage
Storage-capable crops
Sound onions, garlic, winter squash, roots, potatoes, and similar crops may be better stored than immediately processed, but curing, temperature, humidity, ventilation, and variety matter. Use local Extension guidance.

Choose by capacity, not enthusiasm
Preservation can move work from one day to another, but it cannot remove work. Every method consumes some combination of time, equipment, storage space, electricity or fuel, clean work space, containers, ingredients, and attention. Before committing a basket to preservation, audit the actual bottleneck.

Preservation method boundaries you should know before #65 to #68
Freezing
NCHFP describes freezing as a convenient preservation method but emphasizes that freezing does not sterilize food. Most vegetables require crop-specific blanching for quality, and some foods have poor texture after thawing. Use #65 for the actual method.
Dehydrating
Drying reduces water activity enough to extend storage when performed correctly. Finished foods must be dry enough, cooled, packaged to resist moisture, and monitored for moisture pickup. Outdoor sun drying is not appropriate for all foods. Use #66 for the method.
Canning
Shelf-stable home canning depends on a tested process. Penn State's July 2026 guidance stresses that heat penetration depends on acidity, consistency, piece size, solid-to-liquid ratio, jar size, starting temperature, and other variables. There is no safe general formula for inventing processing times. Use #67.
Fermenting and pickling
Acid, salt, food, water, temperature, and time can be safety-critical. NCHFP advises using tested proportions for pickled and fermented products. Use #68 rather than improvising from a social-media recipe.
Build the batch plan before touching the knife
- Write the crop and amount. Use a kitchen scale or a consistent household measure when possible.
- Record harvest date and condition. Note whether produce is fully ripe, needs curing, is heat-stressed, bruised, or otherwise time-sensitive.
- Allocate fresh use first. Name the meals or recipes, not just “eat some.”
- Allocate storage-capable produce. Record the storage location and required conditions.
- Allocate sharing/donation. Confirm recipient and delivery timing before setting food aside.
- Choose preservation methods. Link each batch to a current authoritative procedure before preparation begins.
- Check equipment and destination capacity. Freezer space, dehydrator trays, correct canner, jars, lids, storage containers, labels, and shelf space should exist before the batch grows.
- Assign a deadline. “Tomorrow” is a plan. “Sometime this week” is often how surplus becomes waste.
- Label and inventory the result. Record product, date, quantity, and any recipe/source identifier needed to know how it was made.
Common surplus-planning failures

Stop conditions
Verify this locally
- Crop storage and harvest conditions: your Cooperative Extension office or land-grant university.
- Canning altitude adjustments and current recipes: USDA/NCHFP or your Extension food-preservation program.
- Donation rules and recipient specifications: the actual pantry, food bank, school, nonprofit, or institutional recipient and applicable health/agriculture authorities.
- Community compost acceptance: the garden's #52 compost-system rules and local organics requirements.
- Produce exposed to a contamination event: use the applicable health, agriculture, environmental, or Extension guidance before choosing a food route.
Do this yourself: triage one real harvest
Take the next basket that is larger than your household can immediately use and do not put it on the counter as one undifferentiated pile.
- Weigh or count it.
- Remove anything unsuitable for human food.
- Rank the remainder by urgency.
- Assign a fresh-use quantity to named meals.
- Assign a short-term storage quantity only if you know the storage conditions.
- Assign sharing/donation only after confirming a recipient.
- Assign preservation only after locating the procedure and confirming equipment/storage capacity.
- Give every quantity a deadline.
- At the end of the week, record what was actually eaten, preserved, shared, or lost.
