Harvesting, Handling and Storage: From Plot to Kitchen

The crop is not finished when it leaves the plant.

A good harvest can lose quality, shelf life or safety through dirty tools, hot containers, bruising, animal contamination, poor storage or unnecessary washing. The postharvest job is to move produce from plant to use with as little contamination, heat, damage and confusion as practical.

Protect the harvest through a clean handoff.

The core method is simple enough to remember in the garden: harvest at useful maturity, use clean hands/tools/containers, reject contamination, protect produce from heat and injury, store each crop appropriately, wash under running water before preparation or eating, and route surplus promptly to sharing or research-based preservation.

Harvest at useful maturity.

Bigger is not always better. Tenderness, seed development, color, firmness and intended use determine the crop-specific harvest stage.

Keep food-contact items clean.

Use clean hands, clean harvest tools and containers intended for food, not chemical buckets, trash cans or containers with unknown histories.

Reject contamination.

Produce directly contaminated by animal feces should not be harvested for consumption. Rotten produce is discarded rather than rescued by washing.

Control heat and damage.

Shade harvested produce, avoid crushing or overfilling containers and move perishable crops toward appropriate cooling promptly.

Store by crop, then wash at the right stage.

Many vegetables keep best unwashed until use. FDA recommends washing produce under running water before preparing or eating it and does not recommend soap, detergent or commercial produce wash for household produce.

Maturity before quantity

Harvest for eating quality, not maximum size.

Crop maturity is species- and variety-specific. University of Minnesota's current harvest-and-storage guide uses cues such as tenderness, size, color, shell hardness or head development rather than one universal “days after planting” rule. The practical skill is knowing the few cues for the crops you actually grow.

Build a crop card, not a national harvest calendar.

For every major crop in the plot, record: maturity cue → harvest method → immediate handling → storage category → wash timing → use/preserve trigger.

Before picking

Prepare the harvester and the container first.

USDA school-garden guidance and current Penn State home-garden guidance agree on a useful principle: hands, tools and harvest containers can carry contamination into food that was otherwise clean.

Wash hands before harvest.

Use soap and running water. Rewash after restroom use, handling animals or waste, working with compost/manure, eating or other contamination events.

Use harvest-only containers where practical.

Clean reusable bins, baskets and buckets before harvest. Do not use garbage bags, garbage cans or containers that held chemicals for edible produce.

Inspect knives and scissors.

Clean food-contact harvest tools before use and retire tools or containers that cannot be adequately cleaned or have hazardous damage.

Separate harvest gear from manure/compost gear.

A shovel, bucket or glove used around manure or dirty compost should not quietly become the lettuce-harvest tool.

The procedure

A nine-step plot-to-kitchen routine.

Know what “ready” means.

Use crop-specific Extension cues for maturity and intended use. Record them on the crop card before the main harvest begins.

Inspect the harvest area for contamination.

Look for animal feces, animal feeding, flooding/splash concerns, rotten produce and unusual contamination. If produce directly contacts animal feces, do not harvest it for consumption. Institutional rules may require a larger no-harvest area or additional controls.

Clean hands, tools and containers.

Use food-grade or food-suitable harvest containers that can be cleaned. Keep dirty gardening, chemical and waste containers out of the produce stream.

Harvest gently and keep produce shaded.

Avoid drops, compression, rough stems and overfilled baskets. Penn State postharvest guidance recommends harvesting highly perishable produce while it is cool when practical and shading produce promptly to limit field heat and water loss.

Sort before storage.

Separate sound produce from rotten, contaminated and significantly damaged items. FDA advises cutting away ordinary damaged or bruised areas before preparation when appropriate, while produce that looks rotten should be discarded. That is different from direct fecal contamination, which should not enter the food stream.

Move perishables toward the right temperature.

Leafy greens, herbs, berries and other perishable crops lose quality quickly in heat. FDA advises keeping perishable fresh produce in a clean refrigerator at 40°F or below. But not every whole vegetable benefits from refrigerator-cold storage, so identify the crop's storage category before chilling it.

Wash at the correct stage.

For household use, FDA recommends thoroughly washing fresh produce under running water before preparing or eating it, including produce whose rind will be cut. Soap, detergent and commercial produce washes are not recommended. University of Minnesota notes that, unless produce is visibly dirty, waiting to wash until preparation can improve storage quality and shelf life.

Route the harvest: eat, share, store or preserve.

Do not let surplus become waste because the next step was never decided. Use crop-specific storage guidance. Contact donation recipients before harvest. For canning, freezing, drying, pickling or fermentation, use current research-based recipes and processes such as those maintained by the National Center for Home Food Preservation and Cooperative Extension.

Record losses and improve the system.

Record what became overmature, bruised, wilted, contaminated, rejected by a recipient or spoiled in storage. A useful harvest record teaches next year's planting quantity, harvest frequency and storage capacity.

Heat and physical damage

Quality begins declining before the basket reaches the car.

Harvested vegetables remain living tissue. Heat accelerates respiration and water loss, while cuts, bruises and abrasion shorten usable life and can increase decay. The practical goal is gentle handling and faster movement to shade or appropriate storage.

Harvest cool when the crop benefits.

Tender greens and other high-water-loss produce often handle and store better when harvested during cooler morning conditions. Crop-specific harvest guidance still matters because some storage crops should be harvested dry.

Shade immediately.

Do not leave full harvest containers sitting in direct sun while the rest of the plot is picked.

Do not overfill.

A container that crushes the lower layer is not saving trips. Use more trips or smaller loads for fragile crops.

Prevent cross-contamination in transport.

Keep harvest containers away from chemicals, trash, animal equipment, raw meat and other contamination sources.

Storage categories

“Refrigerate it” is not a storage plan.

University of Minnesota's 2026-reviewed storage guide groups vegetables into different temperature and humidity needs and documents chilling injury in several warm-season crops. New World Survival uses those categories as a decision framework rather than reproducing a large crop encyclopedia.

Use a crop-specific reference for the final answer.

The storage category tells you what to investigate. The exact temperature, humidity, curing method and useful storage life should come from current Extension guidance for the crop and variety.

Washing

Wash for use, not because the harvest bucket looks unfinished.

FDA's consumer guidance is clear about preparation: wash fresh produce thoroughly under running water before preparing or eating it, even when the peel or rind will not be eaten. Firm produce can be scrubbed with a clean produce brush. Soap, detergent and commercial produce wash are not recommended for household produce.

At harvest

Remove loose soil when practical without creating a standing-water wash system. Unless the garden has an approved produce-washing procedure, move produce cleanly to the household or institutional handling area.

Before storage

Many whole vegetables keep better when washing is delayed until use. University of Minnesota specifically recommends waiting unless produce is visibly dirty because extra surface moisture can shorten quality.

Before cutting/eating

Use running potable water. Wash before peeling/cutting so surface contamination is less likely to be transferred inward by the knife.

Institutional food service

Follow the receiving kitchen's SOP and local Food Code. School food-service guidance has specific procedures for washing, sanitizing food-contact surfaces, refrigeration and cut produce that should not be assumed to be the household rule.

Not every imperfect vegetable belongs in the same bin.

Sharing and donation

Ask the recipient before you harvest for them.

A box handed to a neighbor and produce entering a school meal program are not the same transaction. USDA school guidance allows community donations but tells school programs to follow state/local health requirements, communicate growing and handling expectations, identify the source/date and refrigerate promptly when the crop requires it.

Household sharing

Share sound produce in clean containers and tell the recipient when it was harvested and how it has been stored when that matters.

Food pantry / nonprofit

Ask what crops, container types, quality condition, delivery times and refrigeration the organization can accept. Do not assume every pantry can handle highly perishable produce at any time.

Use the receiving program's written procedure. USDA school traceability guidance recommends retaining product/variety, harvest date and persons involved when school-garden produce enters the program.

Do not commingle when traceability matters.

Institutional programs may need garden produce kept separately identifiable from distributor produce so its source can be traced.

Preservation handoff

Preservation begins with sound produce and a validated method.

The harvest guide should route food into preservation, not teach improvised preservation. The National Center for Home Food Preservation maintains current research-based recommendations for canning, freezing, drying, pickling and other methods and hosts USDA Complete Guide to Home Canning resources.

Preserve high-quality produce.

Do not use preservation as a rescue plan for rotten or contaminated food.

Choose the preservation method before the glut.

Know whether the crop will be frozen, canned, dried, pickled or simply eaten/shared before a large succession matures.

Use tested instructions.

Canning and other food-preservation processes depend on validated recipes, acidity, processing method and time. Do not invent a process from ingredient proportions.

Keep the garden and kitchen records connected.

Harvest date and variety can be useful context when comparing preserved-food quality and planning next year's production.

Failure diagnostics

When the harvest disappoints, diagnose what happened after picking.

Greens wilt before reaching home.

Likely cause: harvest heat, sun exposure or water loss. Change: harvest cooler when practical, shade immediately and shorten time to appropriate cooling.

Vegetables rot in storage after washing.

Possible cause: excess surface moisture or incorrect storage environment. Change: confirm whether the crop stores better unwashed and verify temperature/humidity guidance.

Fruit is bruised despite being fresh.

Likely cause: overfilled bins, drops, rough stems or transport compression. Change: reduce load depth and handling steps.

The refrigerator damages warm-season produce.

Possible cause: chilling injury. Change: use crop-specific storage guidance rather than the coldest available location.

Stop conditions

Some produce should never enter the basket.

Do not harvest produce for consumption when it has directly contacted animal feces or is visibly contaminated in a way local food-safety guidance treats as unsafe.
Do not use garbage cans, chemical containers or unknown-use containers as edible-produce harvest bins.
Do not use soap, detergent or household cleaning products to wash fresh produce for eating.

Questions that keep food quality and food safety separate enough to manage both.

Should I wash everything at the garden?

No. Household produce should be washed under running water before preparation/eating, but many vegetables store better if washing is delayed until use. Institutions should use their approved produce-handling procedure.

Can I wash produce with dish soap?

FDA does not recommend soap, detergent or commercial produce washes for household produce. Use running water and a clean produce brush for firm produce when appropriate.

Can I cut off an animal-contaminated spot?

Do not treat direct fecal contamination as an ordinary bruise. Current home-garden and USDA school guidance says visibly contaminated produce should not be harvested/used for consumption.

Should all vegetables go straight into the refrigerator?

Can I donate extra produce to a school or pantry?
