Every opening costs hours
USDA FSIS guidance is specific: an unopened refrigerator will hold food at safe temperatures for about four hours after the power goes out. A full freezer holds for approximately 48 hours. A half-full freezer holds for about 24 hours. These timelines assume the doors stay shut.
Every time the refrigerator door opens, cold air spills out and warm air replaces it. There is no way to open a fridge "quickly enough" to avoid significant heat gain. The practical rule: treat the fridge and freezer as sealed cold batteries. Do not open them to check on food, to grab a snack, or to rearrange items. Eat from the pantry first.
If the power will be out longer than four hours, transfer the most perishable items (meat, dairy, eggs) to a cooler with ice or frozen gel packs. Fill the cooler before opening the fridge, so the transfer is fast. Close the fridge immediately. The goal is to preserve the cold inside the freezer as long as possible while sacrificing the fridge strategically.
Ice crystals mean safety. Temperature means everything.
When the power comes back, USDA FSIS and FoodSafety.gov give clear criteria. If frozen food still contains ice crystals or is at 40 degrees or below, it can be safely refrozen. Quality may suffer (texture, flavor), but safety will not. The ice crystals are the visual indicator that the food never left the safe zone.
Food that has fully thawed and risen above 40 degrees for more than two hours should be discarded. This applies to meat, poultry, fish, eggs, dairy, leftovers, cut produce, and any prepared foods. The two-hour clock starts when the food crosses 40 degrees, not when the power went out.
A food thermometer removes guesswork. USDA recommends keeping an appliance thermometer in the refrigerator and freezer at all times so you can check the actual temperature when power returns. Without a thermometer, you are estimating, and the pathogens that cause foodborne illness do not announce themselves.
The smell test does not work. Bacteria that cause foodborne illness (Salmonella, E. coli, Listeria) can multiply to dangerous levels without producing any detectable odor, color change, or texture change. USDA is explicit: never taste food to determine its safety. When in doubt, throw it out.
The pantry plan and the tools it needs
The strategy during an outage is to eat in layers. First: shelf-stable foods that need no preparation. Crackers, peanut butter, dried fruit, granola bars, canned fruit. Second: foods that need only a can opener. Canned beans, canned soup, canned vegetables, canned tuna. Third: foods that need heat, if you have an outdoor cooking option (grill, camp stove outdoors).
Ready.gov includes a manual can opener in its emergency supply list. Canned food is the backbone of a 72-hour kit, but it is useless without a way to open it. An electric can opener is a power-outage casualty. A manual can opener is light, inexpensive, has no battery to die, and should live in the emergency kit, not in the kitchen drawer where it might be forgotten during an evacuation.
Water for food preparation. If the power outage coincides with a boil water notice (common after storms that damage water infrastructure), use only boiled-and-cooled or bottled water for cooking, washing produce, and cleaning dishes. Do not assume tap water is safe just because it is still flowing.
Surface contamination, not penetration
USDA and university extension services state that wildfire smoke and ash deposits on garden produce are a surface concern. Thorough washing with clean water removes deposits on intact fruits and vegetables. Discard any produce with physical fire or heat damage. Visual appearance and smell cannot reliably indicate whether smoke compounds are present on the skin, but washing is effective mitigation for intact produce. The same principle applies to ash fall: rinse surfaces thoroughly with clean water before eating.
Ready-to-feed eliminates the water variable
CDC and Ready.gov recommend ready-to-feed liquid formula as the safest option during water disruptions because it requires no water and no preparation, eliminating contamination risk. If ready-to-feed is unavailable, use commercially bottled water or boiled-and-cooled water for mixing powdered formula. Never mix formula with hot water — it scalds and destroys heat-sensitive nutrients. Tap water during a disruption may not be safe even if it appears clear. Do not use water of uncertain quality for infant formula without treatment.
