Dehydrating technique: vegetables, fruits, and herbs

01 — Blanching before dehydrating

Blanching stops the enzyme activity that continues to degrade flavor, color, and nutrients even in dried vegetables

Living plant cells contain enzymes that drive ripening and, eventually, decomposition. Removing moisture from a vegetable does not inactivate these enzymes the way heat does. The NCHFP, drawing on University of Georgia Cooperative Extension research, states directly: blanching slows or stops the action of enzymes which cause loss of flavor, color, and texture. It also cleanses the surface of the vegetable, brightens color, helps retard vitamin loss, and wilts or softens the vegetable so it packs more compactly on dehydrator trays. Michigan State University Extension adds that blanching results in longer storage times for dried vegetables, the practical payoff of the extra step.

Blanching for dehydration means brief immersion in boiling water or steam, followed by immediate cooling in ice water to stop the cooking. Times vary by vegetable and cut size. Most vegetable pieces require 1 to 5 minutes of water blanching, though some denser vegetables need longer. The goal is enzyme inactivation, not cooking through. Overlong blanching makes the vegetable mushy and produces a poorer dried product. Herbs and a few other plant foods such as garlic do not need blanching before drying. Fruits, because of their high sugar and acid content, also do not require blanching, though pretreatments like dipping in ascorbic acid solution help prevent oxidative browning in light-colored fruits such as apples and peaches.

02 — Doneness and conditioning

Fruits and vegetables have different doneness targets, and fruits need a conditioning period that vegetables do not

NCHFP's drying guidance, drawn from the University of Georgia's So Easy to Preserve, sets distinct doneness targets by food type. Dried fruits should be leathery and pliable, with no visible moisture and no moisture expressible when a piece is squeezed or folded in half. A piece of fruit leather that has been cut in half should show no moisture and should not stick to itself when folded. Berries are dried until they rattle when shaken. Vegetables must be dried to a harder standard: brittle and capable of shattering, or snapping cleanly when bent, with a moisture content around 10 percent. NCHFP notes that some dried vegetables shatter if struck with a hammer. Meat jerky, a separate category, is done when it cracks but does not break when bent.

After drying, fruits require a conditioning step that vegetables do not. NCHFP explains why: individual pieces in a batch dry at different rates depending on their size and position on the tray. Conditioning equalizes the residual moisture across the batch so no single piece carries excess moisture that could allow mold to grow in storage. The procedure: place cooled dried fruit loosely in glass jars (about two-thirds full), seal, and let stand at room temperature for 7 to 10 days, shaking the jars daily to separate pieces and redistribute moisture. If condensation appears on the inside of the jar, the fruit needs to return to the dehydrator. Vegetables, already dried to brittleness at around 10 percent moisture, do not carry enough residual moisture to require this step.

Cool completely before packaging

NCHFP cautions that warm food causes sweating, which can provide enough moisture for mold to develop. Allow all dried food to cool fully to room temperature before packaging and sealing. This applies whether you are conditioning fruit or packaging dried vegetables directly. Packaging warm food into a sealed container traps condensation against the food surface.

  • Fruits are done when leathery, pliable, and free of squeezable moisture. A piece folded in half should not stick to itself. Berries are done when they rattle.
  • Vegetables are done when brittle, snapping cleanly when bent. NCHFP notes that properly dried vegetables may shatter if struck firmly. This is the correct endpoint.
  • Condition dried fruit for 7 to 10 days before long-term storage. Pack loosely in sealed glass jars, shake daily, and return any batch showing condensation to the dehydrator.
  • Dried vegetables do not require conditioning. Their lower moisture content at completion means redistribution is unnecessary.
  • Cool completely before packaging. Warm food causes condensation inside sealed containers, introducing the moisture that promotes mold.

03 — Storage of dehydrated food

Moisture, oxygen, and light are the three forces that shorten the shelf life of dried food

NCHFP's packaging and storage guidance identifies three enemies of dried food quality: moisture reabsorption, oxygen exposure, and light. Storage temperature also matters directly: NCHFP's So Easy to Preserve data shows most dried fruits store for about 1 year at 60 degrees Fahrenheit but only about 6 months at 80 degrees Fahrenheit. Dried vegetables have roughly half the shelf life of dried fruits under the same conditions. These numbers assume the food was properly dried and packaged; food that is "seemingly bone dry" when packaged can still spoil if moisture is reabsorbed during storage, especially in humid climates.

NCHFP recommends packaging dried foods in clean, dry, airtight containers immediately after cooling and conditioning. Glass mason jars with tight lids are excellent because any moisture that condenses on the inside is visible and detectable early. Plastic freezer bags are acceptable but are not insect-proof or rodent-proof. Vacuum-sealed bags remove most oxygen and are the best option for long-term shelf life. Oxygen absorbers inside sealed mason jars or mylar bags extend shelf life further by removing residual oxygen that promotes fat oxidation and flavor degradation. Store containers in a cool, dark, dry location. NCHFP notes that foods should be checked periodically during storage; soft, moist, or moldy food should be used immediately, re-dried, or discarded.

  • Store in airtight containers immediately after cooling. Dried food begins reabsorbing ambient moisture as soon as it is exposed to air after removal from the dehydrator.
  • Glass jars are excellent because moisture condensation is visible. If moisture appears inside a sealed jar, return the food to the dehydrator before it molds.
  • Most dried fruits store for 1 year at 60°F, 6 months at 80°F. Dried vegetables have roughly half the shelf life under the same conditions (NCHFP / So Easy to Preserve).
  • Cool, dark, and dry location is required. Higher temperatures halve shelf life; light and humidity accelerate quality loss.
  • Check stored dried food periodically for softness or mold. Affected food should be used immediately, re-dried, or discarded. Mold in dried food is not safe to remove and consume around.

04 — Fruit leather and herb drying

Fruit leather is one of the most accessible dehydrating projects because it requires only ripe fruit, a blender, and a lined tray. NCHFP specifies the process: puree the fruit until smooth, adding a small amount of liquid if the puree is too thick to spread. Spread about one-eighth inch thick on dehydrator trays lined with plastic wrap or on cookie sheets (not waxed paper, not aluminum foil). Dry at 140 degrees Fahrenheit, not at the 135-degree setting commonly listed in older guides. Approximate drying time is 6 to 8 hours in a dehydrator, up to 18 hours in an oven set to its lowest temperature. Test for doneness by touching the center: no indentation should remain. The leather should peel readily from the liner when properly dried. While still warm, peel from the liner, roll, allow to cool completely, then rewrap in plastic for storage. NCHFP notes that fruit leathers should keep for up to one month at room temperature or up to one year frozen.

Herb drying is the simplest dehydrating method at home. NCHFP's drying guidance identifies air drying in a warm, low-light, well-ventilated indoor space as the baseline method: attics, spare rooms, and screened-in porches all work well. Tie small bundles with string and hang upside down, which draws the herb's oils into the leaves as the stems dry. A paper bag loosely placed over the hanging bundle collects any falling seeds or leaf debris. Most herbs are ready in 1 to 2 weeks when fully dried and brittle. Michigan State University Extension notes that microwave drying works for small batches of herbs using 30-second intervals, but there is no method to circulate air inside a microwave so it is only suitable for small quantities. Dehydrators set to low temperatures around 95 to 115 degrees Fahrenheit preserve more volatile oils than higher temperatures used for fruits and vegetables.

  • Dry fruit leather at 140°F until the center shows no indentation when pressed. NCHFP's guidance specifies 140°F; 6 to 8 hours in a dehydrator, up to 18 hours in a low oven.
  • Use plastic wrap as liner; do not use waxed paper or aluminum foil. Peel the leather while still warm, roll, cool completely, then rewrap in plastic for storage.
  • Air dry herbs in a warm, low-light, well-ventilated indoor space. Attics, spare rooms, and covered porches work well. Small bundles hung upside down take 1 to 2 weeks.
  • Dehydrators set to 95 to 115°F preserve more herb flavor oils than higher temperatures. Microwave drying is viable only for very small batches of herbs.
