Food handling safety

Most foodborne illness is preventable. It comes down to clean hands, separate surfaces, correct temperatures, and prompt storage. These rules apply in a normal kitchen and become even more important when cooking under disrupted conditions.

01 — Handwashing before cooking

20 seconds with soap, scrubbing between fingers and under nails. This single step prevents more foodborne illness than any other.

The CDC identifies handwashing as the single most effective way to prevent the spread of illness, including foodborne illness. The technique matters: a quick rinse under water does almost nothing. Effective handwashing requires friction, soap, and time.

  • Wet hands with clean running water (warm or cold).
  • Apply soap and lather by rubbing hands together. Work the lather over the backs of hands, between fingers, and under fingernails.
  • Scrub for at least 20 seconds. A common timing reference is humming a short song twice through.
  • Rinse thoroughly under clean running water.
  • Dry with a clean towel or air dry. A damp towel that has been sitting out can reintroduce bacteria.

Wash hands before and after handling raw meat, poultry, or eggs. Wash after touching pets, using the bathroom, changing a diaper, handling garbage, or touching your face. During an outage when running water may be limited, hand sanitizer with at least 60% alcohol is an acceptable substitute for all situations except after handling raw meat (soap and water is required for that).

02 — Cross-contamination

Raw meat bacteria on a cutting board, a knife, or your hands can transfer to food that will not be cooked. This is how most home food poisoning happens.

Cross-contamination occurs when bacteria from raw meat, poultry, seafood, or eggs transfer to ready-to-eat foods (salad, bread, fruit, cooked leftovers) through shared surfaces, utensils, or hands. The ready-to-eat food is then consumed without further cooking, and the bacteria survive to cause illness.

  • Use separate cutting boards for raw meat and for produce or ready-to-eat food. Color-coded boards make this easy to enforce.
  • Wash cutting boards, knives, and countertops with hot soapy water after contact with raw meat, poultry, or eggs before using them for anything else.
  • Never place cooked food on a plate or surface that previously held raw meat without washing it first.
  • Store raw meat on the lowest shelf of the refrigerator so drips cannot fall onto other foods.
  • Wash hands with soap and water after handling raw meat before touching anything else in the kitchen.

03 — Safe cooking temperatures

A food thermometer is the only reliable way to know whether meat has reached a safe internal temperature. Color and texture are not reliable indicators.

165°F

All poultry

Chicken, turkey, duck, and all ground poultry. Measured in the thickest part of the meat, avoiding bone. Also the required temperature for reheating all leftovers.

160°F

Ground meats

Ground beef, pork, lamb, and veal. Grinding distributes surface bacteria throughout the meat, so the entire mass must reach safe temperature. Whole cuts are safer at lower temps because bacteria are only on the surface.

145°F

Whole cuts + rest

Whole cuts of beef, pork, lamb, and veal must reach 145°F and rest for 3 minutes. Fish and shellfish also require 145°F. The rest period allows residual heat to finish killing bacteria.

160°F

Eggs

Egg dishes (quiche, casserole, frittata) must reach 160°F. Fried eggs and scrambled eggs should be cooked until no liquid egg is visible.

Why ground meat requires a higher temperature

On a whole steak, harmful bacteria (E. coli, Salmonella) live on the surface. Searing the outside kills them even if the interior is rare. When meat is ground, surface bacteria get mixed throughout. The entire mass must reach safe temperature because bacteria are now distributed inside, not just on the surface. This is why a medium-rare steak is safe but a medium-rare hamburger is not.

04 — Cooling and leftover storage

Cooked food left at room temperature for more than 2 hours enters the danger zone. Refrigerated leftovers last 3 to 4 days.

The USDA danger zone is 40°F to 140°F. Within this range, bacteria can double every 20 minutes. Two rules govern safe cooling and storage:

  • The 2-hour rule: Refrigerate or freeze cooked food within 2 hours of cooking. If the ambient temperature is above 90°F (common during summer outages or outdoor cooking), the window shrinks to 1 hour. Food left in the danger zone beyond these windows should be discarded.
  • The 3-to-4-day rule: Cooked leftovers stored at or below 40°F remain safe for 3 to 4 days. After that, discard them regardless of appearance or smell. If you cannot eat them within that window, freeze them.

To cool food quickly before refrigerating: divide large batches into shallow containers (no more than 2 inches deep), place hot containers in an ice bath, or stir frequently to release heat. Do not place a large, deep pot of hot food directly in the refrigerator; the center may take hours to cool below 40°F, giving bacteria time to multiply.

05 — Recognizing foodborne illness

Nausea, vomiting, diarrhea, stomach cramps, and sometimes fever. Symptoms typically appear 6 to 48 hours after eating contaminated food.

Foodborne illness (food poisoning) is caused by consuming food contaminated with bacteria, viruses, or their toxins. The most common culprits in the United States are Salmonella, E. coli, Listeria, Norovirus, and Clostridium perfringens. Symptoms vary by pathogen but typically include some combination of nausea, vomiting, diarrhea, abdominal cramps, and fever.

Most cases resolve on their own within 1 to 3 days. The primary risk is dehydration from vomiting and diarrhea. Maintain fluid intake with water, clear broth, or an oral rehydration solution. Seek medical attention if symptoms include a fever above 101.5°F, bloody stools, signs of dehydration (dizziness, dry mouth, decreased urination), or if symptoms persist beyond 3 days.

High-risk groups

Children under 5, adults over 65, pregnant women, and anyone with a weakened immune system are at significantly higher risk of severe complications from foodborne illness. For these groups, seek medical attention earlier and take food safety precautions more seriously, especially during disruptions when refrigeration may be compromised.
