"Canned food lasts forever. You can buy it once and forget about it."

The canning process sterilizes the contents and creates an airtight seal that prevents recontamination. In that narrow sense, canned food does "last forever."
But safe to eat is not the same as worth eating. Over time, the natural chemicals in food react with the metal container. High-acid foods like tomatoes, citrus, and pineapple are especially affected: the acid corrodes the can lining, causing taste changes, texture breakdown, and loss of nutritional value. The USDA recommends consuming high-acid canned foods within 18 months and low-acid foods (meats, vegetables, beans) within 2 to 5 years for best quality.
The real danger is not age but damage. Cans that are deeply dented (especially along seams or rims), bulging, leaking, or rusted through the metal are not safe regardless of their age. Bulging cans may indicate the growth of Clostridium botulinum, which produces a toxin that is odorless, tasteless, and potentially fatal. Never taste food from a suspect can to test it.

Canned food is reliable emergency storage, but it is not a buy-and-forget solution. This is one of the most dangerous food safety myths because it sounds reasonable. Spoilage bacteria, the organisms that make food smell bad, look slimy, or taste off, are often different from pathogenic bacteria, the organisms that cause foodborne illness. Salmonella, E. coli O157:H7, Listeria monocytogenes, and Clostridium perfringens can all multiply to dangerous levels in food without producing any detectable change in odor, flavor, or appearance.
The USDA is explicit: you cannot see, smell, or taste the bacteria that cause foodborne illness. The only reliable indicators of food safety are time and temperature. If perishable food has been in the danger zone (40°F to 140°F) for more than 2 hours, it should be discarded regardless of how it looks or smells.
The distinction matters
Spoilage makes food unpleasant. Contamination makes food dangerous. They are not the same thing, and one does not reliably predict the other. Food that smells terrible may be unpleasant but harmless. Food that smells fine may contain enough Salmonella to send someone to the hospital. Use time, temperature, and proper handling as your safety indicators, not your nose.

"Rice lasts 30 years. Just buy a big bag and store it."

The low moisture content (around 12%) and absence of oils in white rice make this possible.
The claim falls apart in two common scenarios. First, a bag of white rice sitting on a pantry shelf in its original packaging is vulnerable to moisture absorption, insect infestation, and oxidation. Without sealed storage, white rice maintains best quality for only 4 to 5 years. Second, the claim is often applied to all rice, but brown rice contains oils in the bran layer that oxidize and go rancid within 6 to 12 months regardless of storage method. Oxygen absorbers cannot prevent this because the oils are integral to the grain.
What actually matters
The 30-year number is real, but it requires three things: white rice specifically (not brown, not wild, not parboiled), sealed storage with oxygen removal (mylar bags with oxygen absorbers in food-grade buckets), and cool temperatures (below 70°F). Skip any one of these and the shelf life drops dramatically. The myth is not that long-term rice storage is impossible. The myth is that it happens automatically.

"MREs are the best option for home food storage."
FalseMREs are designed for soldiers in the field, not households building pantry depth. They are expensive per calorie, high in sodium, limited in variety, and surplus MREs may have compromised storage histories.
Meals Ready to Eat (MREs) have genuine advantages: they require no cooking, no water, and no preparation beyond opening the package. Each meal includes an entrée, side, dessert, and often a flameless ration heater. For a go-bag or vehicle emergency kit where cooking is impossible and space is limited, MREs are a reasonable choice.
For home food storage, the math does not work. A case of 12 MREs costs $80 to $120 depending on the source. That provides roughly 15,000 to 18,000 calories, or about $5 to $7 per 1,000 calories. By comparison, rice provides approximately 1,600 calories per pound at roughly $0.50 to $0.70 per pound, which works out to about $0.35 per 1,000 calories. Dried beans are similarly economical. A household can build a month of caloric coverage from shelf-stable pantry staples for less than the cost of a few days of MREs.
Additional concerns with MREs for home use:
- Sodium: MREs are designed for soldiers expending 3,000 to 4,000 calories per day with heavy physical activity and sweating. The sodium content reflects that context. For a household sheltering in place with reduced activity, the sodium levels are excessive.
- Shelf life is temperature-dependent: The USDA FSIS notes that MREs stored at 120°F last only about a month, while MREs stored at 60°F can last 7 or more years. Surplus MREs purchased secondhand may have spent time in hot warehouses, vehicles, or outdoor storage with no documentation of conditions.
- Variety: Eating MREs for more than a few consecutive days produces significant appetite fatigue. They were designed for short-term field use, not weeks of home consumption.

"When the power goes out, eat all the perishable food first before it goes bad."

The instinct behind this advice is sound: perishable food will spoil first, so eat it before it goes to waste. But the execution matters. The USDA guidance creates a clear sequence:
- First 4 hours: Eat perishable food from the refrigerator. With the door kept closed, the refrigerator maintains safe temperature for approximately 4 hours. After that, discard perishable items (meat, dairy, eggs, leftovers) that have risen above 40°F.
- Hours 4 through 48: The freezer is your cold storage asset. A full freezer maintains safe temperature for approximately 48 hours with the door closed (24 hours if half full). Do not open it to eat frozen food unless you have decided that the food inside needs to be cooked before it thaws. Every opening lets warm air in and shortens the window for everything else.
- After 48 hours: Begin assessing frozen food. Items that still contain ice crystals or read 40°F or below can be safely refrozen or cooked. Items that have thawed and risen above 40°F should be cooked immediately or discarded.
The mistake people make is opening the freezer early and repeatedly to "eat perishables first," which accelerates thawing and shortens the safe window for all the remaining food. The pantry and the refrigerator should be your first food sources during an outage. The freezer should stay closed as long as possible.
The correct order
Refrigerator first (within 4 hours). Pantry second (shelf-stable food requires no power). Freezer last (keep it closed and let it work as your cold battery for as long as possible).
