01 — When in doubt, throw it out
You cannot tell by look, smell, or taste whether food has grown dangerous bacteria. The USDA is explicit on this point.
Pathogenic bacteria that cause foodborne illness, including Salmonella, Listeria, and E. coli, produce no reliable odor, flavor, or visual change at unsafe temperatures. Food that looks and smells perfectly normal can make you seriously ill. The USDA Food Safety and Inspection Service guidance is unambiguous: never taste food to determine its safety, and when in doubt, throw it out.
The critical thresholds to know:
Refrigerator
4 hours
Perishable food stays safe for about 4 hours with the door closed. After that, discard meat, poultry, fish, eggs, dairy, and leftovers.
Freezer (full)
48 hours
A full freezer maintains safe temperature for approximately 48 hours with the door closed. Half full: about 24 hours.
Danger zone
40-140°F
Bacteria multiply rapidly in this range. Perishable food above 40°F for more than 2 hours should be discarded.
When power is restored, check each item individually. Frozen food that still contains ice crystals or reads 40°F or below on a thermometer can be safely refrozen. Refrigerated food that stayed below 40°F is safe. Anything you cannot verify should be discarded. The cost of replacing food is always less than the cost of a foodborne illness.
02 — The appliance thermometer
A $5 thermometer is the only way to know whether your food is still safe after an outage. Without one, you are guessing.
The USDA and FDA both recommend keeping a dedicated appliance thermometer in your refrigerator and a second one in your freezer at all times. The built-in temperature display on many modern appliances requires power to function, which means it goes dark precisely when you need it most.
A standalone appliance thermometer is battery-free (most use a bimetallic coil) and continues reading the actual air temperature inside the compartment through the entire outage. When power is restored, or when you open the door to assess food safety, the thermometer gives you a factual reading rather than a guess.
Where to place it
In the refrigerator, place the thermometer in the center of the middle shelf, not in the door. In the freezer, place it between packages of food. These locations give the most representative reading of overall compartment temperature. Verify that your refrigerator reads 40°F or below and your freezer reads 0°F or below during normal operation.
03 — Dry ice safety
Dry ice can extend freezer life by days, but it introduces a suffocation hazard that regular ice does not.
Dry ice is frozen carbon dioxide at approximately -109°F. The USDA notes that 50 pounds of dry ice can keep a fully stocked 18-cubic-foot freezer cold for approximately two days. It is far more effective than regular ice for keeping frozen food frozen during an extended outage.
The hazard is that dry ice does not melt into liquid. It sublimates directly into carbon dioxide gas. In an enclosed or poorly ventilated space, the CO2 can displace enough oxygen to cause dizziness, unconsciousness, and suffocation. This is not a theoretical risk; it is a documented cause of death in enclosed spaces.
Dry ice safety rules
Ensure ventilation in any room where dry ice is stored or sublimating. Never place dry ice in an airtight container (it can build pressure and rupture). Never touch dry ice with bare hands; use heavy gloves or tongs. Do not place dry ice in direct contact with food; wrap it in cardboard or newspaper first. Never store dry ice in a vehicle with the windows closed.
04 — Packing a cooler for maximum cold retention
A well-packed cooler can keep food below 40°F for 24 to 48 hours. A poorly packed one fails in hours.
When a power outage extends past 4 hours and the refrigerator can no longer hold safe temperature, the cooler becomes your primary cold storage. How you pack it determines how long your food stays safe.
- Start with a pre-chilled cooler if possible. Rinse the inside with cold water or load a bag of ice 30 minutes before packing food.
- Place a layer of ice or frozen gel packs on the bottom. Add a layer of food packed tightly with no air gaps. Add more ice on top and between items. Cold air sinks, so ice on top cools more effectively than ice only on the bottom.
- Fill all empty space. Air gaps warm faster than packed mass. Use frozen water bottles, additional gel packs, or crumpled newspaper to eliminate voids.
- Keep the cooler closed. Every opening lets cold air out and warm air in. Know what you need before opening, retrieve it, and close immediately.
- Place the cooler in the coolest location available, out of direct sunlight. A basement floor or shaded interior room is preferable to a garage or porch.
- Monitor temperature with a food thermometer. Add more ice as it melts. If the internal temperature rises above 40°F and you cannot get it back down, the 2-hour discard clock starts for perishable food.
Block ice vs. cubed ice
Block ice lasts significantly longer than cubed ice because it has less surface area relative to its volume. If you can get block ice, use it as your base layer. Cubed ice is better for filling gaps around food items. Frozen water bottles serve double duty: they keep food cold and provide safe drinking water as they melt.
