Cold Storage and Shelf Storage

The temperature you assume is not always the temperature you have.

The number on the dial is not the number on the shelf

Most refrigerators have a control somewhere inside: a numbered dial, a slider, or a digital display set by the previous owner and never revisited. What most of them do not show is the actual air temperature on the shelf where your food is sitting. The difference matters. A dial set to "4" communicates a compressor setting, not a measurement. The reality on the second shelf, where the milk and the leftovers sit behind the open container of last night's soup, can be several degrees warmer than the dial suggests.

An inexpensive appliance thermometer, placed where food actually sits, is the only reliable way to know what temperature your refrigerator is holding. The same is true for the freezer. A shelf above the stove gets warmer every time you cook. A cabinet under the sink exposes food to moisture and puts it next to cleaning products. A garage or shed in summer can push temperatures well past the point where canned goods and dry staples hold their quality.

The conditions that protect shelf-stable food are straightforward: cool, dry, and separated from anything that is not food. What it reveals is whether your food supply is actually stored under conditions that protect it, or whether conditions you never thought to check have been quietly working against every other part of your food management.
