Sprouting soaks and rinses a dry seed, grain, or bean until it germinates, producing a fresh, crisp food in a matter of days from something that was shelf-stable a week earlier. Alfalfa, mung bean, broccoli, and radish seeds are common choices for eating raw; wheat berries and other grains are more often sprouted, then dried and milled or added to bread doughs.
The appeal is real: no soil, no season, no equipment beyond a jar, and fresh food in under a week from something that stores for years dry. The catch is also real, and it is not a minor one. This is the single page on this site where FDA's own language is the strongest starting point, not a paraphrase of it.
The same conditions that grow the sprout grow the bacteria
Sprouting needs warmth, moisture, and several days of standing time to work. Those are also the exact conditions Salmonella, E. coli, and Listeria need to multiply. Between 1996 and 2020, FDA documented 52 separate outbreaks tied to contaminated sprouts, resulting in more than 2,700 confirmed illnesses, and the agency's own analysis found that contaminated seed, not the growing process itself, was the likely source in most of them[1].
The non-obvious part is that bacteria can infect a seed internally, beneath the seed coat, not just sit on the surface where a rinse would catch it. The most severe seed-sprout outbreak on record happened in Japan in 1996, when E. coli-contaminated radish sprouts served in school lunches sickened an estimated 10,000 people, mostly students and teachers, and caused 12 deaths[2]. A 2009 outbreak of Salmonella Saintpaul in alfalfa sprouts sickened 235 people across 14 states from a single contaminated seed lot[2], and a 1999 Salmonella Muenchen outbreak traced to one contaminated alfalfa seed lot sickened 157 people across eight states and triggered a 32,900-pound FDA recall[3].
Because of this pattern, FDA specifically advises children, older adults, pregnant women, and anyone with a weakened immune system to avoid raw or lightly cooked sprouts entirely, whether homegrown or store-bought[4]. For everyone else, cooking sprouts thoroughly before eating removes nearly all of the risk, since heat destroys the bacteria a raw sprout can carry. None of this means sprouting is off the table. It means treating it with the same seriousness this site brings to pressure canning, not the same casualness as a windowsill herb pot.
Getting started
Buy seed specifically sold and labeled for sprouting, rather than seed intended for planting in soil, which is not held to the same food-safety standard. Rinse the seed in running tap water for a full minute, then let it settle in a bowl of water and skim off anything that floats, seed coat fragments, hulls, and debris, since a meaningful share of documented sprout contamination has been traced to that floating material[5].
Treat the seed itself, not just rinse it. University of California-Davis, cited by Kansas State Extension, recommends heating a 3% hydrogen peroxide solution to 140°F and soaking the seed for 5 minutes, using an accurate thermometer since exceeding that temperature can damage the seed and hurt germination[5]. Rinse thoroughly afterward and discard the peroxide solution rather than reusing it.
Sanitize the sprouting jar and any utensils before every batch: a wash in hot soapy water, followed by a rinse in a mild bleach solution, three-quarters cup of plain unscented bleach per gallon of water, soaked for at least five minutes and rinsed clean with fresh water[5].
The technique
Place treated seed in a clean, wide-mouth jar fitted with a mesh or cheesecloth lid, cover with water, and let it soak overnight. Drain the water completely the next morning, invert the jar at a slight angle in a dark cupboard so excess water drains away, and rinse with fresh, cool water at least three times a day, roughly every four to eight hours. Standing water is the enemy here; it is exactly the stagnant, warm environment bacteria multiply fastest in.
Most seeds are ready in two to seven days depending on variety. Once sprouts reach the desired length, give them a final thorough rinse, drain and dry them well, and refrigerate immediately. Cool storage slows both growth and bacterial activity together.
Storage and spotting trouble
Store finished sprouts in the refrigerator, ideally in a container that allows some airflow, and use them within about a week. Bacteria that survived the growing process can continue slow growth even under refrigeration, so cold storage buys time, not indefinite safety.
Discard a batch immediately at the first sign of an off or sour smell, sliminess, unusual discoloration, or visible mold, rather than rinsing it again and hoping. When in doubt, the safest move with any batch of sprouts is to cook them thoroughly rather than eat them raw, which destroys the bacteria a raw sprout can carry.
